Caramelised Onion, Blue Cheese & Honey Focaccia
Sweet, savoury, and irresistibly rich — this focaccia combines caramelised onions, creamy blue cheese, and a drizzle of honey for the perfect balance of flavours. Soft, golden, and indulgent, it’s a show-stopping bread that’s as good on its own as it is with grilled meats or cheese boards.
Ingredients
500g strong bread flour
7g dried yeast
325ml warm water
2 tbsp olive oil (plus extra for greasing & drizzling)
1 tsp caster sugar
2 tsp sea salt
For the caramelised onions:
3 onions, peeled & thinly sliced
1 tbsp butter
1 tbsp olive oil
1 tsp sea salt
1 tsp light brown sugar
For the topping:
150g blue cheese, crumbled
2 tbsp runny honey
Sea salt flakes, for finishing
METHOD
Mix flour, yeast, sugar, water, olive oil and salt in a bowl into a sticky dough. Knead on a floured surface for 8–10 minutes until smooth, or use a stand mixer with dough hook. Place in an oiled bowl, cover, and leave to prove 1 hour until doubled.
Meanwhile, cook the onions slowly in butter, olive oil, sea salt and brown sugar for 20–25 minutes until golden and sticky. Set aside.
Preheat oven to 220°C. Grease a baking tray (about 30cm x 20cm). Tip dough in, stretch to fit, dimple with your fingers and drizzle with olive oil. Leave to prove another 30 minutes.
Top with caramelised onions, scatter over blue cheese, and bake for 20–25 minutes until golden.
Finish with a drizzle of honey and a pinch of sea salt flakes. Serve warm.
